Energy Bites

I am not going to write a novel here, because who has time to read when there are energy bites to eat. These are my kids favorite and make for a quick, balanced after school snack. I also bring these on my long trail runs or hikes. They pack well and are a great alternative to store bought granola/energy bars with lots of ingredients you cannot pronounce.
Ingredients:
3/4 cup all natural almond or peanut butter (by all natural, I mean the only ingredient on the list should be peanuts or almonds!)
1 cup old fashioned rolled oats
1/4 cup maple syrup or honey
1/4 cup ground flax
1/4 dark chocolate chips
Optional: unsweetened coconut flakes, unsweetened cacao powder
Mix all of the ingredients together. Scoop with an ice-cream scoop and roll into a ball. Roll in some coconut flakes or cacao powder if desired. Place the energy bites on a parchment paper lined cookie sheet and then transfer to a freezer safe container. I like to keep mine in the freezer and get a few out at a time when you are ready to eat them. Enjoy!
